Eat | Roasted Cubed Beets

Ingredients

  • 4 to 6 beets
  • 1 to 2 tablespoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Preheat the oven to 400F and line a sheet pan with parchment paper.

  2. Wash beets under cold water and pat dry with a kitchen towel. Using a sharp knife, cut off the top and bottom stems. Using a vegetable peeler, peel the beets.

  3. Cut the beets into 1-inch cubes and transfer them to the baking sheet.

  4. Drizzle the beets with olive oil and season with salt and pepper. Toss to combine and bake for 35 minutes, until fork-tender. Remove from oven and serve.
