Clean Keto Balsamic Chicken and Veggies
Ingredients
- 1 ½ lbs chicken tenders
- ¼ cup balsamic vinegar
- ¼ cup Italian dressing
- 1 cup mushrooms
- ½ cup cherry tomatoes
- 1 bunch broccoli rabe
- 2 tsp Italian seasoning
- 2 tbsp olive oil
- parsley for garnish
Instructions
- Preheat the oven to 400°F.
- Whisk together the balsamic vinegar and Italian dressing. Set ¼ cup aside and pour the remaining in a large bowl. Add chicken and let it marinate.
- Slice the mushrooms and cut the tomatoes in half. In a medium bowl, combine mushrooms, tomatoes, broccoli rabe, Italian seasoning and olive oil. Season with salt and pepper.
- Use a non-stick sheet pan or line the sheet pan with parchment paper.
- Add veggies to the tray first. Roast for 15 minutes.
- After 15 minutes, add the chicken and roast for 10 minutes or until chicken in 165°.
- Brush remaining sauce on chicken and garnish with fresh parsley.
