Georgia O'Keeffe Walnut Brownies

walnut brownies

  • 1 cup (2 sticks) unsalted butter, softened, plus more for the pan
  • 4 oz semisweet dark chocolate
  • 1 cup all-purpose flour
  • 1/4 tsp salt
  • 2 cups walnuts, chopped
  • 2 eggs
  • 2/3 cup sugar
  • 2 tsp vanilla extract

  1. Preheat the oven to 375F. Grease an 8 by 8–inch baking pan, line it with parchment paper, then grease the parchment. In a double boiler, gently melt the butter and chocolate together and set aside to cool.
  2. In a bowl, whisk together the flour, salt and walnuts.
  3. Using an electric mixer, beat the eggs, sugar, and vanilla for 2–3 minutes, or until lightened. When the chocolate mixture is cool enough to avoid cooking the eggs, add the egg/sugar mixture; whisk well to combine. Stir in the flour mixture just until incorporated.
  4. Pour the batter into the baking pan and bake for 20–25 minutes, or just until a knife or tester inserted in the centre comes out clean.
